The Olive Tree Heritage: A Sustainable Future

In a small village in Andalusia, surrounded by extensive fields of centuries-old olive trees that stretch towards the horizon, a girl grew up with a curious spirit and love for the land.

My name is Neyva Martinez, and this is my story.

Since I was a child, I accompanied my family to the olive grove, where I learned with fascination the secrets of the land and the cycles of cultivation. My grandfather taught me that each tree had a story to tell and a fruit to offer, just like each of us.

The Dream of Childhood

Every autumn I used to go with my family to harvest the olives and play with my cousins among the trees while the older ones picked the fruit of the harvest. Since I was a little girl I felt that I was part of something bigger, a legacy that had been passed down from generation to generation, although at that time I still did not understand what that legacy consisted of. As I grew up, my grandfather told me about the importance of taking care not only of the olive tree, but of the entire natural environment.

“The olive tree gives us everything it has, and that is why we must respect it and give it something back in return,” he said.

With wrinkled hands full of wisdom, he showed me how to identify the different olives, the resources of each tree to seek its survival and how each olive tree had its own character.

“Each olive tree is like a person, daughter. It grows over time, adapts to its surroundings and, if you take good care of it, it gives you the best fruit you can imagine”

my grandfather told me as he caressed the gnarled trunk of one of the oldest olive trees.

As I grew older, I understood that those trees were the symbol of my roots and my identity. The cold days picking olives with my grandparents, my parents, my uncles and cousins, laughing, running and dancing among olive trees during the harvest, became my most cherished memories.

Over the years, I became aware of the challenge that many olive growers faced with the waste generated by harvesting the fruit: the branches, the leaves and the pruning. Many times, the work of getting rid of it demotivated farmers from harvesting the crop and they often preferred to let it go to waste. When they collected it, this waste was burned or discarded for no useful purpose. I was disturbed by how something so abundant and natural could end up as a waste and I began to obsess over finding solutions.

The Return

After several years of absence, I only thought about returning to the olive groves, to that place where my grandfather had taught me to love the land.

With the knowledge of economics and sustainable development acquired at university, I decided to return. But not as the girl who went with her family to the harvest, but as a woman determined to give a new direction to the tradition of my environment. I wanted to create something bigger. I wanted to contribute to agriculture in some positive way and pay tribute to my grandparents and the love they had instilled in me for the olive grove.

After many hours of work, effort and dedication, I returned with an innovative vision. It aimed not only to improve olive oil production, but also to give a new use to olive grove waste, creating a project that integrated sustainability and the circular economy.

I started with the creation of a brand of extra virgin olive oil whose drops represented the wisdom and care of the ancient olive growers. YPSILON OLIVE OIL.

It was not only about selling oil; but the fruit of a life dedicated to love for the land, respect for tradition and the vision of a better future for our community. My family's legacy lives on in every bottle, in every tree, and in every shared story.

The future has arrived: Birth of a Sustainable Industrial Project

Combining the knowledge of leading experts in the sector and the support of some research institutions, we are working to carry out a pioneering industrial project in the region.  The goal is ambitious, but we are moved by love for our land

A Radical Change in the Industry

Ypsilon EcoOlive Horizons is looking to set itself up as an example of innovation and sustainability for the olive industry. The project would not only reduce the environmental impact of oil production, but also generate employment in the region and promote sustainability throughout the value chain.

The project intends to demonstrate that it is possible to evolve the traditional olive grove industry  towards a greener and more profitable model by  demonstrating how traditional agricultural practices can coexist with advanced technology and sustainability.

The Legacy of José Bermúdez

I will never forget my grandfather’s words: “We must give back to the earth what it gives us.” And that is our purpose. Not only to bring olive grove waste back to life, but to give hope and a future to our community. Each bottle of “YPSILON OLIVE OIL” not only tells the story of a high-quality oil, but also that of a project that will transform the past into a sustainable future.

With the success of Ypsilon EcoOlive Horizons, it will demonstrate how innovation and tradition can merge to create something extraordinary. Hand in hand with olive trees, we will not only build a profitable business model, but also an example of sustainability that will protect the lands that our ancestors loved so much and that are now in the hands of new generations.

Each buyer of our EVOO contributes to the legacy of our families and so many generations of Jaén residents who have taken care of the countryside with devotion, and whose love for the land is perpetuated in us.
